My world has recently been rocked, by what you ask? Well, the answer is simple – something ‘Berry Berry Yummy’ (excuse the play on words)
“But what could so ‘Berry Berry Yummy?'” you ask? (sorry i couldn’t help throwing that in again – it’s just so relevant!) Non other than the famous, flash and simple staple – a vanilla berry compote! i was recently on the hunt for a recipe, and stumbled on one on the oh so very handy website of www.taste.com.au
We’ve normally been at home just mixing a berry coulis with fresh berries and heating it up in the microwave (that is very hand too, if your ever in a muddle and have these to ingredients at hand) but it’s time we got down, and dirty, and homemade the ‘berry’ delicious magnificence! So i will stop beating around the bush and get down to business:
VANILLA BERRY COMPOTE

1/2 vanilla bean
500g frozen mixed berries
1/4 cup caster sugar
1. Halve vanilla bean lengthways. Scrape seeds from bean. Place berries, seeds, bean and sugar in a saucepan over low heat. Stir to combine.
2. Cook, stirring occasionally, for 8 to 10 minutes or until berries have just softened. Remove from heat. Cool completely. Serve.
-mixed in a smoothie/milkshake
-on french toast
-along side a cake
-drizzled on pavlova slices
-with croissants (even better with french toasted croissants)
-in a trifle
the list is endless!! It is such a versatile kitchen staple, believe me, you will be hooked – beware!
And if you have any left over (fat chance) but if you do, just put it in a container, in the fridge.
– perfect to whip out, (and heat up if want) when ever needed!
Once you’ve made this simple, full proof compote, you will never look back!
